The recipe is for making Buckeyes cookies, which are peanut butter balls dipped in chocolate. Talk about a heavenly combination.
Chocolate and Peanut Butter. YUM!!!
Oh, and before I forget, just a little bit of information about Buckeyes; real Buckeyes are nuts that grow on trees and are related to the horse chestnut. Just thought you might find that interesting.
Kate told me Buckeyes are an Ohio tradition which are easy to make and very delicious. She said they usually make them in honor of big Ohio State Buckeye football games and for the holidays. How cool is that?
OK, on with the recipe! Here you go:
Buckeyes
1 stick butter
1 ½ cups peanut butter
1 pound confectioner’s sugar
1 tablespoon vanilla extract
12 ounces semisweet chocolate chips
2 tablespoon Crisco shortening
Cream butter and peanut butter together.
Add sugar and vanilla and thoroughly blend. It gets really thick so definitely use a mixer if you have one.
Shape into small 1-inch balls.
Refrigerate on waxed paper for 30 minutes.
Melt chocolate chips and shortening together in a double boiler. (If you don’t have one, place a heat resistant bowl over a small pot with a couple inches of water inside. Make sure the bowl doesn’t touch the water and adjust the heat to make sure the chocolate melts, but doesn’t stiffen.)
Dip peanut butter balls with a toothpick into the chocolate, covering all but a small circle on top.
Cool on waxed paper.
Makes about 60.
